Acapulco, a beautiful coastal city on Mexico’s Pacific coast, was the country’s first major tourist destination. Stars like Frank Sinatra, Elizabeth Taylor, and John Wayne often visited to watch the sunsets, swim in the bay, and enjoy its exceptional food and hospitality.

Unfortunately, rising cartel violence, crime, and pollution caused tourism to decline in the late 1990s and early 2000s, deeply affecting the local economy. While Acapulco is becoming popular again with Mexican tourists, natural disasters like Hurricane Otis in 2023 have slowed its recovery.

Chef Jorge Chavez has lived in Minneapolis for more than twenty years. He started Pulco Food Truck to share the everyday flavors of his beloved hometown with his new community in the Land of 10,000 Lakes.
